Tuscan Bean Salad

This isn’t exactly how I made it, but how I want to try to make it next time.

  • 2 cans white beans
  • 1 can diced tomatoes
  • 1/2 cup chopped onion
  • 2 minced garlic
  • 3-4 diced sun-dried tomatoes
  • 1 cup kalamata olives
  • 1 cup artichoke hearts
  • herbs (rosemary, basil, oregano, parsley)
  • olive oil
  • champagne vinegar
  • salt, pepper, and red pepper flakes

Saute garlic and onions in olive oil with herbs and salt and pepper. Add a bit more olive oil and whisk in vinegar. Fold in beans and tomatoes and heat through.
